Here’s your KirbyCo Builders’ Cooking Tip of the Week: Capt. Kirk’s Smoked Fish Dip Smoke approximately 1-2lbs of fresh fish using Hickory or Apple chips Refrigerate the smoked fish overnight. Following day shred the fish and crumble in a large bowl. Add 1 cup mayo 1/2 cup sour cream 1 tbs Westershire sauce 1 Vidalia onion diced Teaspoon of Old Bay 1/4 tbs of salt 1 tsp lemon juice 3 tbs tiger sauce or more if desired Serve with captain wafers or crackers. Blend ingredients well n chill. Fish Cake: To the above recipe add 1 egg to enough for 2-3 cakes, roll in panko and sauté on low heat with butter or sesame oil till brown. Serve with tartar sauce. However, it was sweet because First Coast fishing legend Capt. Dennis Young stopped by the studio to tell some captivating tales about fishing the First Coast since 1972 (the great white stories alone are worth a listen). Here’s your Kirbyco Builders Inc. cooking tip of the week: Shrimp Scampi! 1 lb shrimp peeled deveined 1 sweet onion Large clove of garlic 1/4 cup Stick butter White wine 1/2 & 1/2 cream Old bay seasoning 1 lemon Sauté onion in a large skillet with a couple tablespoons of butter till translucent and remove from heat. Place onion in a bowl off to the side. In the same pan sauté the garlic on low heat until cooked with a couple of tablespoons of butter n remove from heat and place in a bowl off to the side. Take two more tablespoons if butter and place in pan until melted and slightly simmering careful not to burn it. Put a few shots of wine in with the butter and gently scrap the pan to deglaze it. This accomplished lower the heat to continue to cook and drop in a 1/4 stick of butter. Add shrimp and sprinkle with Old Bay . As shrimp begin to turn pink on one side add onions and garlic back in with a shot of wine. Turn the shrimp and be careful to not overcook them. Add a few squeezes of lemon and as it simmers slowly add a 1/4 cup of 1/2&1/2 to them. Stir in the cream and Reduce heat to warm and serve. Facebook…

It was a might brisk for them, since they were outside…which prompted to them to talk about the chilly water temps and the breeze that goes through ya when you’re on the bow. Here’s your L.V. Season your roast generously on both sides with salt and pepper (Livia’s!) Add to a baking dish, cover with foil, and bake for 4 hours. Remove the roast from the oven and shred using two forks (If the roast is not pulling apart easily, put it back in the oven for 30 min). Raise the oven heat to 425. Toss the shredded pieces of roast in the rendered fat and place it back in the oven, uncovered, for 10-15 minutes until the pieces are nice and caramelized Serve and enjoy. Facebook…

Then shoot one good coat of Rust Oleum Cold Galvanized Compound and one good coat of Metallic Finish from Hagan Ace Hardware. They l ook like new!! Here’s your Kirbyco Builders Inc. cooking tip of the week: Captain Kirk’s Baked Beef Ribs One full rack of beef ribs Rib Rub Olive oil Carrots(1 lb) Onion (1lg) Sweet Baby Rays BBQ Rub ribs with olive oil blended with a tablespoon of Rib Rub.
