Today's "Food For Thought": Autumn Celebration Honey Apple Roses 1 package frozen puff pastry 2-3 apples of choice 1/2 lemon Apple butter 2 tablespoons Sugar 1/2 teaspoon Cinnamon Honey to drizzle

  1. Thaw the puff pastry at room temperature for about 30 minutes.
  2. Prepare the apples: Cut in half along the core and cut out the core. Slice into very thin crescents (keep the skin on). Place apple slices into a microwavable bowl with water to cover. Squeeze 1/2 a lemon into the water and gently mix. Microwave for 4-5 minutes until the apple slices are tender.
  3. Roll the puff pastry slightly to flatten, and cut into 6 long strips. Roll each strip a little thinner.
  4. Spread some apple butter along the puff pastry strip.
  5. Place apple slices along one edge of the puff pastry so that the round (peel) side is slightly above the pastry. Overlap the apple slices halfway.
  6. Lift the other edge of the puff pastry and fold it over the bottom of the apple slices. You should have a double-sided strip of pastry with apples peeking out the top.
  7. Starting at one end of the strip, roll everything gently but tightly into a rosette shape. Immediately transfer into a muffin/cupcake tin. I used cupcake liners but you can also grease the tin or use silicone cups.
  8. Repeat to make 12 roses.
  9. Mix sugar and cinnamon together and sprinkle over the roses.
  10. Bake at 350F for 45-55 minutes. Add some foil if the apples start to brown.
  11. Let the roses cool for about 15 minutes, drizzle with honey, and serve.

Notes: It took me a few tries to get these right. Try baking one at a time before doing a whole batch. They are dense and wet, so you must make sure the puff pastry cooks all the way through in the middle.
