Welcome to Grilled by The Staff Canteen, this is series 5 and it's our first episode with co-host Aaron Middleton, who previously worked at Le Manoir, The Ledbury and Hide and now you'll find him on his very successful social media channels. He also competed in MasterChef: The Professionals.
Aaron has picked five guests from the hospitality industry to chat to and put under the Grilled spotlight, and his first guest is former boss and fellow Le Manoir alumni, Ollie Dabbous, owner of Michelin-starred Hide.
In this episode we talk to Ollie about the highs and lows of new openings, the time he was arrested and his dislike of kidneys.
