Chef Roy Yamagishi is one of Hawaii’s most successful chefs and restaurateurs. A founding member of the Hawaii Regional Cuisine movement. Graduating from the prestigious Culinary Institute of America in New York and trained in the traditional French kitchen he worked in Los Angeles initially developing his own unique fusion style dishes influenced by his Japanese grandfather. On returning home to Hawaii he believed the Hawaiian cuisine could be developed into its own style with fresh local ingredients. Now, as he tells Graeme Kemlo he is celebrating the 14th year of the upcoming Hawaii Food and Wine Festival staged across the Hawaiian islands from October 18 to November. 10.
