We are fascinated by restaurant culture; from celebrity chef’s, to cooking competitions, to fancy food photography, or finding out the latest hottest place to open in our neighborhood. But behind the facade is the hard day to day work of running a restaurant, managing people, and perhaps most importantly offering true hospitality. Today, Dan talks with two restaurateurs from St. Louis, Jim Fiala and Mike Duffy. They run quite different styles of establishments, one fine dining, the other a casual sports pub.
