Luis worked for the original owners of Bacalhau Grill as a teenager before working at Safeway and then eventually taking over the market. Luis began serving bacalhau tacos (inspired by Bacalhau à Gomes de Sá) which became well-known across the Bay Area, in California. He had the opportunity to spend more time in Terceira and jumped at it.
